Here's a simple and delicious chicken fajita recipe that brings together juicy chicken, colorful bell peppers, and onions in a flavorful, fajita seasoning. This dish is perfect for a quick weeknight dinner and can be served with warm tortillas, fresh salsa, and your favorite toppings.

Chicken Fajita Pasta Recipe

Ingredients:

    • 2 boneless, skinless chicken breasts, thinly sliced
    • 1 red bell pepper, thinly sliced
    • 1 yellow bell pepper, thinly sliced
    • 1 green bell pepper, thinly sliced
    • 3 cloves garlic, minced
    • 1 large onion, thinly sliced
    • 2 tablespoons olive oil
    • 1 cup heavy cream
    • 1 cup chicken broth
    • 8 oz shell pasta (or any pasta of your choice)
    • 1 cup shredded cheese (like cheddar or Mexican blend)
    • Salt and pepper to taste
    • Fresh cilantro, chopped (for garnish)
    • 1/2 packet of Fajita seasoning

Instructions:

  • Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Prepare the Chicken and Vegetables: Season the chicken slices with salt, pepper, and half of the fajita seasoning. Heat some oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet, dice, and set aside.
  • In the same skillet, add a bit more oil if needed and sauté the bell peppers, onion, and garlic until softened, about 5 minutes. Season with the remaining fajita seasoning.
  • Make the Sauce: Pour in the chicken broth and heavy cream. Bring to a simmer and let it cook for 5 minutes, stirring occasionally.
  • Combine Everything: Add the cooked pasta, cooked chicken, and shredded cheese to the skillet. Stir well until everything is heated through and the cheese is melted. Season with salt and pepper to taste.
  • Serve: Garnish with fresh cilantro or parsley if desired. Serve hot with lime wedges on the side for squeezing over the pasta.
